Yung Taco's

Chicken or Jackfruit Mole Tacos (enough for 6 small tacos) with Montezuma's Chilli Bonkers, Dark Chocolate with Chilli

What you need!

1 small roast chicken or 300gram of chicken breast
1 tin of jackfruit (veggie/vegan alternative)
1 onion
3 garlic cloves
1 tablespoon of chipotle paste
1 tablespoon of peanut butter
1 teaspoon of cinnamon
1 teaspoon of cumin
1 teaspoon of smoked paprika
2 chillies (choice of heat)
Bunch of fresh Parsley
1 teaspoon of honey
1 tin of tomatoes
25 grams of grated Montezuma's Chilli Bonkers, Dark Chocolate with Chilli
50ml of chicken or veg stock
1 lime
1 bottle of slow Richie’s
1 avocado for topping
4/5 spring onions for topping
Feta/halloumi/fresh Mozzarella for topping
Pickled jalapenos for topping


  1. Season the chicken and start roasting or browning the breasts.

  2. While these are cooking, place the onion, garlic, chilies, chipotle paste, cumin, cinnamon, paprika, honey, peanut butter, parsley into a blender until you get an nice smooth paste.

  3. Place the paste in a saucepan on the heat and get it slowly bubbling, add in the dark chocolate, tomatoes, stock, lime juice and the cooked chicken shredded or shredded jackfruit. leave on low heat.  grill up some halloumi or shred feta or mozzarella.

  4. Chop up the spring onions

  5. Slice up the avocado

  6. Warm the tacos in the oven

  7. Put your taco together whatever way floats your boat.....and drizzle some hot sauce!
