Method
- Add all the ingredients for the marinade, mix up, ensure all chicken thighs are covered and marinate for up to 24 hours (attempt to marinate for at least 2).
- Cut your potatoes into fries, and bring some water to boil.
- Part boil the potatoes, then drain and preheat a baking tray to 180c, cover the potatoes with the salt, oregano and olive oil. Bake for 30-40 minutes until crispy.
- Prepare the tzatziki by grating the cucumber, mincing the garlic then adding to a bowl and mixing with the Yoghurt. Top with the olive oil and salt.
- Heat olive oil over a pan at high heat, and remove your chicken from the fridge.
- Let the marinade drip off on each thigh and add to the pan, 6-8 minutes to each side until chicken is cooked.
- Cut your tomatoes and cucumbers and mix together.
- Heat up your flatbread, and assemble. Chicken first, fries second, any additional salad, then your tzatziki and of course more hot sauce. Wrap it up and enjoy.
