Peri Peri Stuffed Shrooms
Non-psychedelic Piri Piri stuffed mushrooms good enough to still give you visions
Orriss & Son Piri-Piri sauce
What you need...
2 large Portobello mushrooms
2 large Portobello mushrooms
1 large carrot (any other surplus veg that needs using up)
bunch of fresh parsley
a few fresh basil leaves
1 garlic clove
20 grams or so of parmesan (as much sprinkling as you want)
2 spring onions
6 cherry tomatoes
4 slices of halloumi
salt and pepper
Olive oil
Method:

First chop any surplus veg that need using up in small cubes.

Chop the fresh herbs, garlic, cherry tomatoes and spring onions.

Scoop the stalk of the portobello out and chop it all up.

Grate the carrots and some Parmesan and drizzle with olive oil.

Mix everything in a bowl and season.

Fill the mushrooms with the veg and herb mix.

Place the slices of Halloumi evenly on the two portobello mushrooms

Place under the grill until the halloumi is browned and the mushroom is cooked (around 10 minutes)
