Recipe
Turn your oven on to 180 degrees. Take your chicken thighs and place in mixing bowl. Add all your dry ingredients (spices and herbs) and the garlic chopped and oil into the bowl with the chicken, mix thoroughly until coated. Place in roasting dish and add your chicken stock. Place in the hot oven.
While chicken is cooking, shallow fry your onion and peppers until soft. Add into a blender with the rest of the ingredients. Blitz until you have a smooth consistency.
Grate your cheddar. Once the chicken is cooked take out of the oven and start shredding. Heat up a frying pan and add each tortilla wrap individually onto the hot pan and sprinkle the grated cheddar onto the wrap.
Turn the tortilla around in the pan so that the cheese is facing down onto the pan, keep grilling until crispy and light brown. Turn back around and add some shredded chicken and some spicy taco sauce. Fold over and make sure it’s nicely packed in.
Serve with your favourite hot ones hot sauce.
