Hallooo-Me & Plantain
Featuring the homie Lazy Scientist’s - Brixton hot sauce. This fresh salad is stacked with Halloumi
Halloumi and plantain salad - an ode to South London's most vibrant community (4 servings)
What you need...
200 grams of Halloumi - cut into strips
2 Plantains - cut into diagonal slices
1 bag of lettuce leaves or 1 head of lettuce
1 large Avocado
1 Lime
Half a cup of pomegranate seeds
1 Red Onion
1 Orange into segments
Bunch of fresh Parsley and mint dressing 2 tbsp of oil
1 Tbsp of Balsamic Vinegar
1 tblsp of wholegrain mustard
1 tsp of honey
salt & pepper
1 tsp of Lazy Scientist Brixton
Method
- Slice the plantain into diagonal strips and mix with a good dollop of lazy scientist brixton and a drizzle of honey
- Slice the red onion into thin strips and drizzle in lime juice, leave to the size to pickle.
- Slice the avocado and mix with lettuce leaves, orange segments and pomegranate seeds
- Mix the dressing and mix into the salad, add the pickled red onion and set aside
- Heat some vegetable oil in a pan and add the plantain slices
- While they fry, add the halloumi slices under the grill.
- Take the plantain from the oil once cooked and browned and leave on the kitchen paper to absorb the oil
- Once the halloumi is grilled, add this on top of the salad
- Serve salad with plantain
