Crispy Tofu Burrito
The O.G. Bauce Brothers big boy burrito, (yes we love the letter 'b'). This recipe is fully vegan and but slaps just as hard as any burrito.
What you need...
1 block of smoked tofu (don't buy silken)
1 large tbsp of cornflour
1 tsp of paprika
salt and pepper
2 large tomatoes
3 spring onions
2 cloves of garlic
1 tin of sweetcorn
1 bunch of parsley
1 bunch of coriander
1 large avocado
Salad leaves (spinach, lettuce, rocket or iceberg)
4 wraps or pittas
Mix the cornflour, paprika and salt and pepper.
Chop the smoked tofu into small cubes and toss into the cornflour mix.
Chop up the avocado and mix with lime juice, coriander and season.
Chop the tomatoes and spring onions, mix and leave to the side.
Fry up the sweetcorn with the garlic until slightly browned.
Heat some oil in a shallow pan, thumbnail deep.
Fry up the tofu until golden and place on kitchen paper to absorb the excess oil.
Warm up the wraps, spread the avocado mix then place the garlic sweetcorn, crispy tofu, tomatoes and spring onions and garnish with salad leaves of your choice. Add some pickled jalapenos for extra heat/crunch.
Drizzle with tahini and Slim Jim Cayenne and Lime hot sauce. Close up the wrap by folding both ends and the two other sides together.
